Truffle Cashews ‘Comme Le Ritz’
If you’ve read my post titled ‘The Ritz Paris for a Light Lunch’, you may remember the Truffle Cashews that I enjoyed during that lovely meal. They were such a tasty, sophisticated treat, and one that seemed relatively easy to replicate, that I decided to experiment when I returned home to see if I could do just that. I am happy to report that, with minimal effort and ingredients, I have succeeded! If you too would like to experience a little taste of the Ritz, just follow the quick and easy recipe below.
Ingredients:
- 350 grams salted cashews (I used sea salted but I’m sure regular salted ones would work well too)
- 10 grams or 2 teaspoons truffle oil.
1) Preheat either your oven or toaster oven to 325F degrees.
2) Place cashews and truffle oil into a large zip-lock bag and toss until all the nuts are covered with oil.3) Spread the oil-coated nuts in a single layer on a shallow baking dish.
4) Bake for 20 minutes or until golden, stirring once or twice to achieve even colouring.5) Remove from oven and let cool.
6) Store in a sealed, air-tight container
With the holiday season just around the corner, this delicious treat is perfect for serving at celebrations you have planned. It also makes a great hostess gift or stocking stuffer.
But for the time being, pour yourself a glass of Armagnac, put on a little Edith Piaf, sit back, close your eyes and imagine that you are in the Bar Vêndome at the Hôtel Ritz Paris. C’est si bon!

Hi! I just made these and was not sure how many cups 350 grams actually is. I think I added to much truffle oil because they are a bit oily. Can you please convert it into cups for me? I tried to use converters online but none had whole nuts, just ground nuts. Thanks so much.

Happy to Sue! 350 grams of whole cashews is approximately 2 and 2/3 cups. Hope this helps.

Hi sorry to say this just does not work.
As soon as the cashews go into the oven and the cashews warm up the truffle aroma in the truffle oil is cook off you can smell it leaving the cashews without any truffle taste or smell. You just cant cook with truffle oil.

I haven’t experienced that. I do find that the flavour intensifies as the cashews cool. And storing them in a sealed container is important.
